Double Pasta e Fagioli

Loaded with veggies and beans, this traditional Italian dish is full of flavor and very nutritious! Hearty and comforting for those relaxing days lounging around!

Ingredients

  1.  1 lb. lean ground beef

  2.  1 lb. hot Italian sausage (no casing)

  3.  2 cups chopped onions

  4.  2 cups chopped carrots

  5.  2 cups chopped celery

  6.  4 cloves chopped garlic

  7.  2 28oz. diced tomatoes

  8.  1 28oz. tomato sauce

  9.  1 can of beans each - red, white, dark

  10.  1 24oz can of V8 juice

  11.  2 tablespoon white vinegar

  12.  6 cups chicken broth

  13.  3 teaspoons garlic salt

  14.  2 teaspoons oregano

  15.  2 teaspoons basil

  16.  1 teaspoon garlic pepper (or regular pepper)

  17.  1 teaspoon thyme

  18.  1/2 lb. Ditalini pasta

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 8 servings

Directions

  • Heat 1 tablespoon olive oil in large pot over medium heat, crumble in both meats and cook, stirring occasionally until cooked through.

  • Drain fat and transfer meat to a plate, set aside. Heat another tablespoon olive oil in same pot.

  • Add onions, carrots, celery, and garlic over medium-high heat until tender (5-6 mins.)

  • Add chicken broth, cooked meat, diced tomatoes, tomato sauce, V8, chicken broth, vinegar, and all herbs/spices and bring to a boil.

  • Reduce to a medium-low heat, cover with lid, and simmer, stirring occasionally, for about 15-20 mins.

  • Prepare ditalini pasta according to package directions; al dente.

  • Add cooked and drained pasta to soup along with 1/2 cup of pasta water.

  • Add all beans to pot.

  • Allow to simmer for another 15 minutes.

  • Serve with grated Parmesan cheese.
