Double Pasta e Fagioli
Loaded with veggies and beans, this traditional Italian dish is full of flavor and very nutritious! Hearty and comforting for those relaxing days lounging around!
Ingredients

1 lb. lean ground beef

1 lb. hot Italian sausage (no casing)

2 cups chopped onions

2 cups chopped carrots

2 cups chopped celery

4 cloves chopped garlic

2 28oz. diced tomatoes

1 28oz. tomato sauce
-
1 can of beans each - red, white, dark

1 24oz can of V8 juice

2 tablespoon white vinegar

6 cups chicken broth
-
3 teaspoons garlic salt
-
2 teaspoons oregano
-
2 teaspoons basil
-
1 teaspoon garlic pepper (or regular pepper)

1 teaspoon thyme

1/2 lb. Ditalini pasta

Olive oil

Yield: 8 servings
Directions

Heat 1 tablespoon olive oil in large pot over medium heat, crumble in both meats and cook, stirring occasionally until cooked through.

Drain fat and transfer meat to a plate, set aside. Heat another tablespoon olive oil in same pot.

Add onions, carrots, celery, and garlic over medium-high heat until tender (5-6 mins.)

Add chicken broth, cooked meat, diced tomatoes, tomato sauce, V8, chicken broth, vinegar, and all herbs/spices and bring to a boil.

Reduce to a medium-low heat, cover with lid, and simmer, stirring occasionally, for about 15-20 mins.

Prepare ditalini pasta according to package directions; al dente.

Add cooked and drained pasta to soup along with 1/2 cup of pasta water.

Add all beans to pot.

Allow to simmer for another 15 minutes.

Serve with grated Parmesan cheese.
